This fresh and delicious spin on traditional meatballs plays on the increasingly popular hamburger served with peanut butter found in some trendy restaurants. Full of protein, Peanut Power Meatballs are a tasty addition to a cocktail or dinner party.
Ingredients:
Meatballs:

chopped peanuts |

egg yolk |

bread crumbs |

chopped fresh parsley |

Peanut BBQ Sauce:
| 1/4 cup |
extra creamy peanut butter |
50 mL |
| 1 cup |
barbecue sauce |
250 mL |
Directions:
Meatballs:
In bowl, combine beef, garlic, peanuts, egg yolk, bread crumbs, parsley and Worcestershire sauce. Season with salt and pepper. Form into desired size meatballs.
In large skillet, heat olive oil. Brown the meatballs evenly by gently rolling them around the pan. Depending on size of meatballs, they may need to be finished in the oven at 450°F (230°C) until they are cooked through.
Peanut BBQ Sauce:
In small saucepan combine peanut butter with barbecue sauce. Heat, stirring. Serve with meatballs.
