Ingredients
1 chicken, whole
2 tbsp butter
1 onion, finely chopped
2 tbsp aromatic herbs, chopped
Salt and pepper
Stuffing
3 cups wild rice
1 cup USA Peanuts
2 tsps sesame oil
2 tbsps soy sauce
½ cup raisins
Preparation

Heat the oven to 200°C.

Remove chicken insides and rinse perfectly under tap water; let it drain. Thoroughly spread butter over chicken; put salt, pepper, the chopped onion and half the herbs in the inside.

On a baking tray, season chicken with salt and pepper and sprinkle with the remaining herbs; place the chicken on the tray and bake for 30 minutes; turn it over and bake for another 30 minutes; place the chicken on its back and keep baking for 45 minutes more.

Remove from oven and allow to rest at least 15 minutes before cutting.

To prepare the stuffing, cook the rice according to instructions in the package. In a skillet heat the sesame oil and sauté peanuts for 2 minutes; add cooked rice and raisins, season with soy sauce and stuff chicken. Serve chicken accompanied by the stuffing in a bowl.
