Ingredients

For the dressing
2               garlic cloves, large, peeled, and chopped
¼ cup        rice vinegar
1 tbsp        honey
1 tbsp        soy sauce
2               Serrano peppers, with no seeds or veins,
cut into pieces
1 tsp          fresh ginger, grated
½ cup        USA Peanut Butter
¼ cup        olive oil
Salt and pepper

For the salad
1               purple lettuce
1               green lettuce
1 cup         canned tuna
2               eggs, hard boiled, cut into pieces
1 cup         USA Peanuts, finely chopped

Preparation

  1. In a bowl, mix rice vinegar, honey, and soy sauce with a mixer; add garlic, Serrano peppers, ginger, peanut butter, and olive oil in a thin thread, mixing continuously. 
  2. Place lettuce leaves in a large bowl, pour some dressing and arrange on a large platter; add peanuts, tuna, and eggs.  Serve salad with more dressing.
